Not Your Mother’s Slow Cooker Recipes for Two: For the Small Slow Cooker (Paperback)10.22.09

Not Your Mother's Slow Cooker Recipes for Two: For the Small Slow Cooker

From Booklist
With the introduction of a smaller model that cooks in quantities for one or two people, the slow cooker’s popularity has grown even more. This downsized appliance for the single person or the childless couple allows the cook to prepare a meal in the morning, head off to a job, and still have a hot meal virtually ready when the workday has ended. Hensperger demonstrates this diminutive cooker’s versatility with a collection of recipes that fit in with today’s changing tastes in food. Chilis and soups show off the slow cooker’s obvious virtues. In addition to beef- and pork-based stews and braises, plenty of turkey and chicken recipes appeal to devotees of lower-fat cooking. Polenta and risotto enhance the usual pasta dishes. Hensperger further offers some recipes for accompaniments designed for stovetop or oven preparation such as cornbread, pilafs, and dumplings. EatingWell Serves Two: 150 Healthy in a Hurry Suppers (Hardcover)10.17.09

EatingWell Serves Two: 150 Healthy in a Hurry Suppers

From Publishers Weekly
An introduction covering the most basic of basics and dishes such as Tex-Mex Taco Salad might send serious home chefs in search of another book, but this straightforward, convenience- and health-driven volume has more gourmet gusto than readers might expect. And Romanoff, recipe developer for EatingWell magazine, provides recipes that make enough dinner for two people and can be prepared “in 45 minutes or less (under 30 minutes, in some cases).” Each recipe includes information on active time and total time to complete the dish and nutrition data; many have make-ahead instructions. Especially tempting options include Lamb, Fig & Olive Stew; a dressed-up grilled cheese (Grilled Manchego with Spinach and Spicy Plum Chutney); Pomegranate Duck; Coffee Bean & Peppercorn Steak; and quick desserts like Balsamic Vinegar-Spiked Strawberries, and Roasted Grapes. A section on sides such as Quick Cheese Grits and Avocado-Corn Salsa and suggested menus for a variety of occasions—New Year’s Eve, a “hot date,” pizza night—make planning a healthy meal easy, even when time is limited. A fusion of simplicity, healthy ingredients and just-right quantities, these delicious, exciting new recipes are designed for today’s growing world of empty-nesters, couples without children and smaller households. For millions of fast-paced, modern households, the old cookbook standard of “serves four” is increasingly outdated and a daily nuisance. With more than 77 million baby boomers adjusting to the Empty Nest Syndrome, and with their adult children setting up their own new homes, there is a mounting demand for quick, easy, healthy recipes yielding fewer servings. But cooking for two people or even singles isn’t as simple as cutting a recipe in half. In EatingWell Serves Two, the award-winning editors and recipe developers for America’s leading food and nutrition magazine have created 150 dinner recipes from their hugely popular “Healthy in a Hurry” and “Serves Two” columns to meet the specific needs of smaller households.More than a cookbook, EatingWell Serves Two provides a smart guide for how to shop in small quantities, how to store leftover ingredients, keep a well-stocked pantry and use easy cooking strategies that result in minimal waste while putting a healthy, delicious meal on the table in 45 minutes or less.Filled with mouthwatering photography and tips on shopping, planning and simple cooking for two with healthy ingredients and without waste. Full-color throughout.

Cooking for Two: 120 Recipes for Every Day and Those Special Nights (Hardcover)10.16.09

Cooking for Two: 120 Recipes for Every Day and Those Special Nights

From Publishers Weekly
Weinstein and Scarbrough, both writers for Gourmet and Fine Cooking, have amassed a nice assortment of recipes aimed at twosomes. Although the cookbook lacks pictures, the recipes are understandable and relatively easy to prepare. The authors modify ingredients so that instead of having to store, and a week later throw out, the leftovers, one can buy just the amount necessary of a particular item. For example, they show that one can actually bake a batch of two large Linzer Cookies as a dessert, or prepare just two servings of a Lardons Salad with Poached Egg and Warm Bacon Dressing. The authors point out, however, that dairy ingredients are more difficult to find in smaller quantities, and even when substitutions can be found, they don’t always work quite right. Each dish is rated according to its ease of preparation and follows Weinstein and Scarbrough’s mantra of “you’ll buy what you use, use what you buy.” Copyright © Reed Business Information, a division of Reed Elsevier Inc. All rights reserved.

Tea for two. That’s what it’s all about, right? So how come every recipe you pick up says “serves 4 to 6″? Or more! What do you do when you want macaroni and cheese, but don’t want to be reheating it for three nights? Or a couple of cookies, but don’t want to be tempted by two dozen sitting on the counter all week?Creative cookbook authors and cooks Bruce Weinstein and Mark Scarbrough have all the answers in Cooking for Two.Brimming with 120 smaller-serving, big-taste recipes,Cooking for Two offers cooks familiar favorites such as PastaBolognese, Chicken Pot Pie, and Mushroom Barley Soup, as well as new dishes for today’s tastes like Pork Satay Salad and Snapper Fillets Sautéed with Orange and Pecans. Simply cutting down larger recipes leads to wasted ingredients. But Bruce and Mark have developed each recipe so you buy only what you need, and use all of what you buy. Instead of opening a can of vegetable stock only to use three tablespoons, use the liquid the dried mushrooms have soaked in. If an onion is too large for a recipe, chop a shallot instead. The dessert chapters are filled with cookies, puddings, and cakes, all designed for two servings. Small-batch baking requires strict attention to detail. A regular egg can be too big for a small batch of six cookies, so they suggest quail eggs or the easy-to-find pasteurized egg substitutes, which you can measure out in tablespoons.Truly a cookbook for everyday use, each recipe is labeled as quick (ready in minutes with minimal cooking), moderate (requires a bit more preparation or cooking), or leisurely (perfect for quiet celebrations or weekend meals) to help you decide which dish best fits into your day. With ingredient and equipment guides, as well as tips on how to stock your pantry to avoid those there’s-nothing-in-the-house-so-let’s-go-out moments, Cooking for Two will surely become the cookbook you reach for every night of the week. It’s just two perfect.
